From Huehuetenango — Guatemala's highest, driest coffee country — a clean, sparkling light roast with citrus lift, gentle cocoa, and a sweetness that lingers. Grown in the shade where the songbirds winter, roasted light but fully developed so it's bright, never sharp.

The place: Huehuetenango sits in Guatemala's far northwest, where dry winds off the mountains of Mexico let farmers grow coffee higher than almost anywhere else — without the frost that altitude usually brings. That thin, cool mountain air ripens the cherry slowly, and slow-ripened coffee is dense, complex, and bright. It's the classic Guatemalan cup: clean, high-toned, a little citrus, a little chocolate.

The people: our beans come from Guaya'b, a cooperative of Jakaltek Maya smallholders in the town of Jacaltenango. It's Fair Trade Organic — a fair price back to the farmer, grown without synthetic chemicals — and Smithsonian Bird Friendly, which means it's raised under a real forest canopy that shelters the migratory songbirds passing through. Around here, that means something.

Shade-grown, where the songbirds winter. Bird Friendly coffee is grown under forest canopy instead of cleared land — habitat for the same songbirds that migrate through our part of the world. A little bird on the bag, a little forest left standing. That's a fair trade.
Light, but not raw: we roast this one light to keep every bit of its brightness — but fully developed, so it's sweet and clean, never grassy or sour. Bright the way ripe fruit is bright, not the way an underripe one is sharp. It brews beautifully on a simple machine, no fancy gear required.
Brew It Right — to show the brightness
Light roasts love a touch hotter and a hair finer. Start here.
Pour-Over (the showcase) — 1:16, medium-fine, 205°F, ~2:45–3:15. Where the citrus really sings.
Auto-Drip — ~2 Tbsp per 6 oz cup, medium grind. Clean and easy.
French Press — 1:15, coarse, 4 min. Softer, rounder side of the cup.

Roasted to order in small batches in Jacksonville, FL, then rested a few days to hit its peak before it ships. Please allow 3–5 business days. Best within 3–4 weeks of the roast date.
