Why Ceylon

Ceylon is the name for tea from Sri Lanka — an island whose high-altitude growing regions produce black tea with a distinctive character that separates it from Assam or Darjeeling. It’s brisk and lively with a natural citrus note that comes from the terroir, not from added flavoring. That brightness is the reason Ceylon is the go-to base for classic iced tea and the Arnold Palmer — it stays clean and refreshing even over ice and lemon.

Orange pekoe is a grade designation (not a flavor), referring to whole-leaf quality rather than the fannings and dust that go into most grocery store tea bags. That’s why Ceylon Pekoe Classic brews so much more cleanly — the leaf structure is intact, which means better flavor and less astringency at the same steep time.

Steep It Right — Bert’s Ceylon Baseline

Start Here: Water 200–212°F / 93–100°C 1 sachet per 8–10 oz Steep 3–5 min — remove to avoid bitterness
Classic Hot Mug 1 sachet in 8–10 oz at 200–212°F. Steep 3–5 min — remove the sachet. 3 min is bright and citrus-forward; 5 min brings more malt body. Over 5 min gets astringent — milk helps if you do.

Iced Tea Pitcher 3–4 sachets in 16 oz at 212°F for 5 min (strong concentrate), then pour over a full pitcher of ice and top with cold water to ~64 oz. Ceylon’s natural citrus brightness absolutely shines iced. Sweeten while warm if using sugar — it dissolves much better.

Arnold Palmer Style Brew strong (3 sachets / 12 oz / 5 min), cool, then mix 50/50 with fresh lemonade over ice. Ceylon’s citrus + the lemon is one of the great summer drinks. Use fresh-squeezed lemon if you can.

Milk Tea / Builder’s Style 1 sachet in 6 oz at 212°F for 4–5 min (strong), top with warm whole or oat milk. Ceylon holds up well to milk — the citrus and malt read through without getting muddy. Add honey or sugar to taste.
Cold Brew Overnight 2 sachets in 24 oz cold water in the fridge for 8–12 hours. Smooth, low-astringency, naturally sweet — a gentler version of Ceylon’s character that’s great straight or over ice with lemon.
