Build gently to keep the bubbles lively; float the hot shot last.
Method
- Build: In a tall glass full of ice, add 2–3 oz (60–90 ml) fresh orange juice, a micro pinch of salt, and any syrup. Stir.
- Top: Add 2–3 oz (60–90 ml) very cold soda water.
- Float: Gently pour 1–1.25 oz (30–37 ml) hot espresso over the back of a spoon to float. Express an orange peel and garnish with a wheel.
Straining the OJ removes pulp so crema marbles cleanly through the spritz.
